Mexican Soup

Another wonderful round from the crock pot!!!!!

  • 1 lb Ground Chicken
  • Onion, chopped
  • Garlic, minced
  • 1 1/2 C Butternut Squash, peeled and cubed
  • 2 White Potatoes, chopped (I tend to chop some large and some small… the small ones thicken the broth nicely)
  • Carrot, chopped
  • 1 C Roasted Green Chilies
  • 1/2 T Cumin
  • ~1 T Chili Powder
  • 1 Qt Broth
  • S&P

First brown meat in a skillet.  Poor off fat and add to crockpot.

Add all other ingredients and cook on low for ~8 hours.

I bought lime and cilantro to add to the soup upon serving, but it was so good it didn’t need anything extra.
