Curried Red Lentils


  • 2 cups red lentils
  • 1 onion, chopped
  • 1" knob of ginger, minced or grated
  • 3 garlic cloves, chopped
  • 2 tbsp veggie bouillon
  • 2 serrano peppers, chopped
  • 1 can coconut milk
  • 1 large butternut squash, cubed
  • 2 tbsp red curry paste
  • water


  1. Sauté the onion and garlic in a bit of olive oil or ghee.
  2. Once softened add red curry paste, chopped serrano peppers, ginger, coconut milk, squash, veggie bouillon, red lentils. Mix. Add water, just enough to cover. Season with s&p. Simmer over lo heat stirring often. Add water as necessary.
  3. Cook until lentils and squash are soft.




Pot of delicious mush!
