Veggie Supreme Salad




Cheers to a quick, easy, simple, and thoroughly satisfying salad!

  • Endive Lettuce, chopped
  • Romaine Hearts, chopped
  • Beet, peeled and grated
  • Corn, raw sliced off the cob
  • Frozen Peas, defrosted on the counter
  • Shredded Cheese, any kind
  • Dry Roasted Sunflower Seeds
  • Pickled Okra, chopped into 1/2″ rounds
  • Roasted Red Peppers, chopped
  • 1/2 Meyer Lemon, juiced
  • 1/4 Cup Olive Oil
  • 1 Garlic Clove, minced
  • 1/2 t – 1 t Dijon Mustard
  • 1 T Worcestershire Sauce
  • 2 T Vegenaise
  • S&P

This was quite simple as you can see.  Majority of the lettuce was endive, with a little romaine.  I made another batch of the vegan caesar dressing since it was so delicious and I still had half the meyer lemon.  I mixed it with the immersion blender again but this time I used a different olive oil, Bragg, and the consistency came out more caesar-like, even with the same proportions for all ingredients.  They both tasted delicious.
