Wild Rice ‘Stuffing’

Wild rice stuffing:

Wild Rice

  • 1 c uncooked wild rice
  • veggie bouillon
  • olive oil
  • mushrooms, chopped
  • 1 stalk celery, diced
  • onion, sliced thin
  • garlic, minced
  • 2 sprigs fresh oregano
  • slivered almonds
  • dried cranberries

1. Cook wild rice in water flavored with veggie bouillon.  I don’t overcook the rice, but I do cook it all the way through as it’s going to bake and dry out some.  Drain if any water is left once cooked.

2. Sauté onion and garlic until soft.  Add celery and mushrooms cooking only for a bit to start to soften.

3. Mix veggies and wild rice in a glass casserole dish.  Add fresh oregano, almonds, and cranberries.  Season with s&p.  Bake ~30 minutes until edges slightly crispy.
