VEGAN COOKIES

This is a recipe I found online years ago and have been making them ever since.  They are fool proof really and turn out wonderful every time!

I use more coconut than is called for and I use long pieces of raw coconut.  I find this helps the cookies bind together.  I made two batches and realized with the first batch that I forgot I prefer small pieces of chocolate.  The dough doesn’t stick well to the large pieces of chocolate and if you get a clump of chocolate chips in your cookie there’s a high chance the cookie will be crumble around the chocolate when eating.  These cookies are best made small ~1.5 T of dough per cookie.  I make little rounds.
