An easy salad using store bought peanut sauce/dressing. I particularly like a local brand Sister's Pantry.
Peanut Sauce (for tofu marinade and dressing)
Noodles (the store did not have rice vermicelli noodles so I used soba)
Endive, chopped (red and yellow)
Cilantro, chopped (fresh)
Fish Sauce (optional)
Press tofu - take the block of tofu out of the package and place it in between a stack of paper towels. On top of the tofu place something heavy (my skillet works perfect). The tofu will bulge out on the sides but will not split. After about 20 minutes the paper towels should be soaked. Remove the tofu and slice in to 8 pieces. Marinate the tofu in a bit of the Peanut Sauce.
Cook the noodles to your liking, rinse with cold water, drain, and put in the fridge to chill.
Grill the tofu until there are nice grill marks on each side.
Assemble your salad… noodles on the bottom, then the lettuce/veggies/cilantro, tofu, and top with more of the peanut sauce.
