Sweet potato sandwiches are colorful and a perfect for a vegetarian lunch!
- Sweet Potato
- Tomato, sliced
- Avocado, sliced
- Cheese, thinly sliced (I use raw cheese)
- Pita, halved
- Peel and thinly slice the sweet potato with a mandolin.
- Steam sweet potato slices for ~10 minutes (until just tender). Set aside to cool.
- Assemble ingredients inside pita and season with s&p.
Variations: sprouts, cucumbers, bell pepper, sliced carrot, red onion
Omit the cheese and as long as the bread is acceptable this sandwich can be vegan : )
