Split Mung Bean Dal

Josh and I both happen to love dal.  This protein rich, mainly non-meat, stew can me made with any bean or legume.  My favorite is always with mung beans.  I found a recipe online to make dal in a crock pot and it’s super super easy so I thought I’d share.  No need to go to the Indian market for any ingredients, unless your grocery store doesn’t sell mung beans.  Normally when you buy mung beans the outer layer is removed so they are yellow, but with these the ‘skin’ was left on so this dal had a darker color.  This recipe is about as easy as it gets!

Split Mung Beans

  • 1 lb split mung beans
  • 2 celery stalks, chopped fine
  • 1 large carrot, grated small
  • 1 medium onion, chopped fine
  • 2 T butter
  • 1 T curry powder
  • 1 T lemon juice
  • 1 bay leaf
  • 1/2 t salt
  • 2 chicken bouillon cubes
  • 2 qts water

Rinse the mung beans well and add to crock pot along with all the other ingredients.

Cook on low for 7-9 hours.

Serve with naan or rice for a wheat-free meal!
