Shrimp Caesar Salad

 

Here’s a simple but filling salad including beets, shrimp, hard boiled egg, and tomato.  We all know I’m not a huge salad fan so to inspire myself to make one I have to include lots of flavors and components.  I marinated my shrimp in Annie’s Naturals papaya poppy seed dressing.  If you have not tried this dressing you must.  It is my favorite of all the Annie’s dressings.  It’s great with any kind of green whether bitter or sweet and I have used it to marinade shrimp numerous times.  I can imagine it would be a great chicken marinade too.  The beet I sautéed in a bit of olive oil and then steamed.  I like my beets to have a bit more texture so I chop them, sauté them in olive oil, add water to the pan, and cover allowing the beet to get just tender.  I then cook off any left over water uncovered and let the beets lightly brown.   As you can see in the pictures my egg was slightly undercooked but not enough to be an issue.  For whatever reason my normal method didn’t work this time.  And I thought I had the perfect hard boiled egg recipe.  For the dressing I used Annie’s Naturals caesar dressing.  This particular one of Annie’s I am not a fan of.  I should have used the papaya poppy seed instead.  Luckily there were enough other flavors so it didn’t bother me too much, but this was the last I’ll be eating that dressing.  Overall this was a perfect meal for a hot evening.
