Every now and then I really want to eat a tuna fish sandwich. I don’t really enjoy egg salad anymore and I don’t eat chicken salad so there aren’t many sandwiches I really get in to. Tuna fish was always one of my staples but I have been avoiding it since becoming pregnant. Not that this is a bad thing. I have been really good about restricting my bread intake this pregnancy. When I first found out I was pregnant I ate an egg sandwich every morning for breakfast and my weight started to come on fast. I quickly eliminated this habit and noticed a drastic improvement in the weight gain. I figure if I avoid the carbs at home I can enjoy them when I go out and don’t have to worry about eating them too often. Every now and then I give in though and enjoy a bagel. Tonight I decided to make a salmon melt. It was really good but I would have preferred it to be tuna. Soon enough though and I’ll be back on the tuna wagon : ).
Salmon Melt
- can of salmon (don’t skimp on the quality!)
- chopped celery
- dill weed
- olive oil
- vegenaise
- salt
- bagel
- avocado
- carrot
- tomato
- cheddar cheese
- Make salmon salad: mix salmon, celery, dill weed, olive oil, vegenaise, and salt. I like a lot of celery and dill weed, but use whatever proportions sound good to you.
- Slice bagel and slightly toast. Then assemble melt: bagel-avocado-carrot-salmon salad-tomato-cheese. Broil until cheese is melted.
