In general I am not a huge fan of salsa and most of the time when I’ve had roasted tomatillo salsa in restaurants it’s always been too spicy for my tastes. So for these reasons I’ve never ventured down the road of experimenting with tomatillos. What a mistake! Tomatillos are amazing. I absolutely loved their tangy flavor. I finally found ‘my’ salsa! And there’s really nothing to it. I blended roasted tomatillos and an onion with cumin, salt, lime juice, and cilantro. This salsa was a great topping for our ground beef tacos!
Roasted Tomatillo Salsa
- – 1 lb tomatillo, husks removed
- – 1 onion, quartered
- – 1 teaspoon cumin
- – 1/2 teaspoon salt
- – juice of 1/2 lime
- – 1/4 cup fresh chopped cilantro
- In a 400° oven roast whole tomatillos and quartered onion 40 minutes.
- In a blender add tomatillos, onion, cumin, lime juice, cilantro, and 1/4 teaspoon salt. Pulse until chunky. Taste test and add in more salt if necessary.
