Roasted Onions

 

I just wanted to share an idea with you all.  There are many many ways to spice up your dishes without spending a lot of money or taking a lot of time.  For me one of those ways is with roasted onions.  They add amazing flavor to just about any dish!  Add some to your cooked rice, or to a pasta dish, or on a sandwich, or in soups/stews, or use a topping for tacos/quesadillas.  I have come to love cooked onions.  Roasting them until browned and slightly charred on the edges brings out the sweetness in them.  Just slice into rings, toss well with olive oil, and roast in a 400° oven for ~45 minutes.
