Of course I forgot to upload my pictures before I left the house, but not worry they are to come. I did space on taking a picture of the completed meal but I have plenty of leftovers to heat up a bowl and photograph. So not to worry. I do have a good excuse though… The Indobox is here!!!! Beautiful people who play awesome music and are family. It’s been two years since we’ve seen them, way overdue. So needless to say my week is made by having their presence in town.
I pretty much used the same recipe as version 1 (previous post) but decided to use sweet potato instead of squash and use curry powder instead of curry paste. The end result was absolutely delicious, and honestly I’m not sure which version I like better. They were both satisfying in many ways.
Red Lentil Dal
Red Lentils, 2 c
Peel and cube sweet potato, I used a fairly large one.
Chop onion, garlic, and serrano. Grate ginger.
1 can of coconut milk, 2 teaspoons bouillon, and 2-3 tablespoons curry powder.
Add all to crock pot and top with water. Cook on low 8 hours.
We enjoyed this with some local made pita bread!!
