Raw Beet Salad

Josh and I recently tried a new small family owned restaurant, Arabesque, located near our home.  The food was incredible!  Homemade pita, hummus, baba ganoush, tabouli, stuffed grape leaves, soups, and desserts.  We enjoyed a Mediterranean sampler platter and bought some hummus, baba ganoush, and pita to go.  With the food we brought home we decided to make our own sampler platter…

This is still a clean out the fridge and house kind of meal meaning we have very little produce stocked.  I did have one beet, an avocado, mixed greens, a lemon, and some more fresh apples from my parents.  Here is what I created:

Raw Beet Salad


  • 1 large beet washed and grated, skin on
  • 1 cup apple juice, I juiced my own
  • 2 tablespoons olive oil
  • 1-2 tablespoons fresh lemon juice
  • 1/2 teaspoon mustard powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper


  1. Place grated beet in a bowl.
  2. Mix apple juice, olive oil, lemon juice, mustard powder, salt, and pepper in a jar. Cover and shake to combine.
  3. Pour enough of dressing to coat the beets and let sit for 30 minutes before serving. (Enjoy the extra dressing on greens)
