Pumpkin Bread #2

Ingredients

  • 3 C Spelt Flour
  • 1 t Salt
  • 2 C Light Brown Sugar
  • 2 t Baking Soda
  • 3 C Pumpkin Puree*
  • 1 C Olive Oil
  • 3 Eggs, beaten
  • 1/4 C Water
  • 1/2 t Nutmeg
  • 1 1/2 t Cinnamon
  • 1 t All Spice
  • 1/4 C Toasted Pumpkin Seeds
  • 1/4 C Cacao Nibs

Instructions

  1. Roast half a pie pumpkin cut side down at 350° for about 45 minutes until tender. Once cooled food process into a puree (see picture below).
  2. Preheat oven to 350°.
  3. Sift flour, salt, and baking soda together. Wisk in sugar.
  4. Mix pumpkin, oil, eggs, water, and spices together.
  5. Fold dry ingredients into the pumpkin mixture.
  6. Fold in the roasted nuts and cacao nibs. (I quickly toasted my pumpkin nuts in the oven on a baking sheet).
  7. Butter and flour two loaf pans.
  8. Bake ~60 minutes.
  9. Cool a bit before turning on onto a wire rack to finish cooling.
