Portobello Sandwiches

Ingredients

  • Portobello Caps, 1 per person
  • Olive oil, ~1/4 cup
  • Balsamic vinegar, ~2-3 tbsp
  • Oregano, fresh ~4 tbsp
  • Basil, dried ~1 tbsp
  • Rosemary, dried ~1/2 tsp
  • Garlic Powder, dried ~1/4 tsp
  • Bread/Bun
  • Tomato, sliced
  • Cheese, sliced
  • Avocado, sliced
  • Lettuce
  • Hummus

Instructions

  1. Mix the marinade - olive oil, balsamic vinegar, oregano, basil, rosemary, and garlic powder. Pour over the portobello caps, gills side up. While the mushrooms are marinating heat the grill.
  2. Grill the caps ~5 min. per side.
  3. Assemble the sandwich… Toast bread and melt the cheese on one slice of the bread with the tomato under it; portobello on the melted cheese; avocado & lettuce; bread with hummus.
