I haven’t cooked much other than left overs so I thought I’d post my Saturday Farmer’s Market Lunch: Boulder Polenta from Laudisio’s Stand. I don’t have much experience with eating polenta but this style was my favorite yet. Polenta cooked until creamy and then baked with a layer of ricotta cheese and spinach in between it… and topped with red sauce and mushrooms. The texture of the polenta was perfect, soft and creamy with a firm outside. This I will recreate!
