Banana Bread


I normally make a typical banana bread but this time decided to create a recipe using some caribbean flavors.  Honestly this was the best banana bread I’ve ever made.  Next time I might add an extra banana into the mix to make it a bit moister, but no complaints!



  • 2 C Flour
  • ¾ t Baking Soda
  • ½ t Salt
  • All Spice
  • Nutmeg


  • 1 C Sugar
  • ¼ C Butter, softened
  • 2 Eggs
  • 1 ½ C Mashed Bananas (~4)
  • ¼ C Yogurt
  • 3 T Cruzan Rum Dark
  • ½ t Vanilla
  • Zest of 1 Lime


  • Coconut Flakes
  • Chocolate Chips
  • Sliced Almonds


1. Mix dry ingredients and set aside.

2. Using stand mixer, mix sugar and butter, scraping sides as needed.

3. Add eggs one at a time.

4. Add bananas, yogurt, rum, vanilla, and lime zest.  Scrape sides and incorporate well.

5. Stir in coconut, chocolate, and almonds.

6. Bake at 350 for 1 hour in a greased bread pan.  Cool 10 minutes before removing from pan and finish cooling on a wire rack.
