Another wonderful round from the crock pot!!!!!
- 1 lb Ground Chicken
- Onion, chopped
- Garlic, minced
- 1 1/2 C Butternut Squash, peeled and cubed
- 2 White Potatoes, chopped (I tend to chop some large and some small… the small ones thicken the broth nicely)
- Carrot, chopped
- 1 C Roasted Green Chilies
- 1/2 T Cumin
- ~1 T Chili Powder
- 1 Qt Broth
First brown meat in a skillet. Poor off fat and add to crockpot.
Add all other ingredients and cook on low for ~8 hours.
I bought lime and cilantro to add to the soup upon serving, but it was so good it didn’t need anything extra.
