So I had this great idea to make veggie pot pie soup in the crock pot. I didn’t put too much thought into it when buying the ingredients thinking I’d actually come up with a plan before I made it. Well lets just say that didn’t happen. I’m cutting up the broccoli and onion when I realize I don’t have any potatoes. So Josh is awesome and runs to the store to get me some, but I should have taken it as a sign to rethink or actually think up a plan. I threw everything into the crock pot which was not what I should have done. I came home to an amazingly delicious smelling house but the broccoli was total mush, the peas were deflated, and the cream of celery was a horrible choice! So why am I posting this? Because in theory this dinner should have been delicious. And also because it was the only meal I made from scratch in the last week! This week I’m getting back on track and starting next week my schedule is changing giving me back dinner hour!!!! You have no idea how incredibly happy this makes me, and I can credit it to my ability to work hard and unselfishly. YAY!!
Here’s the concept of my meal, with what I think I should have done. Maybe you can make it a success and send me back the recipe :)
- Frozen Peas
- Frozen Corn
- Cream of Mushroom
- Cream of Celery
Prepare all raw veggies chopping to desired size. I like my broccoli small, so when I possibly get inspired to remake this recipe I will add the broccoli and frozen veggies 30 minutes before serving so they are still colorful and crisp. Also I normally just use Amy’s Semi-Condensed Mushroom soup but this time I used Pacific brand both mushroom and celery..
I won’t be going down the road of cream of celery again. I wasn’t stoked on the smell when I opened it and I should have known that the flavor wouldn’t disappear. So I’m thinking the way to cook this is to make a ‘potato’ soup with onion, garlic, and carrot… and then add the rest of the veggies later on. I guess the better idea would be to avoid the crock pot but since I worked into dinner hour I was trying to help my cause out.
My next great idea, which I didn’t get to try, was to melt some butter and fresh oregano in a saucepan and add some crumbled fresh bread soaking up all the butter. I was then going to lay the bread in a flat layer on a baking sheet and bake into crispy croutons for topping the soup.
In my head this still sounds delicious, but honestly I will probably just make a pot pie next time.
I guess pot pie is too good to be modified.
