In a large bowl add the shredded cabbage. Add enough vegenaise to coat, a tablespoon or so of pickle juice, and season with salt. Refrigerate until serving. I made mine a few hours in advance.
Steam lobster tail.
Chop lobster and combine with the rest of the ingredients. Chill. Slice the soft rolls and lightly toast in a skillet with some butter. Fill with lobster salad.
Salad Hand Rolls
I made different combinations of the above ingredients only using pomegranate seeds in them all. I didn’t use a dressing but let the pomegranate juice combine everything together. My only addition would have been some feta cheese.
