Lentil & Rice Tacos

Josh and I discovered this amazing Mediterranean Deli; Cascade Deli located at 26th Street and Pearl Street!  The lady who runs the place makes all her food from scratch… it’s delicious and ridiculously cheap.  The lentils and rice are our leftovers from dinner one night and for something creative and different we decided to make tacos out of it all!  Even though I did not make the lentils and rice I wanted to post this to encourage creativity with left overs so food is not wasted!

We used wheat tortillas (they were out of corn), raw cheddar cheese, avocado, radish sprouts, and red cabbage.  I steamed the lentils and rice on the plate shown in a bamboo steamer; which I have found to be the best method for reheating without drying out!
