Lemon Square Pie

Josh didn’t want a traditional cake for his birthday so as one of his desserts I made lemon squares… I used sucanat for my sweetener which is why the color is light brown instead of yellow.

  • 1/4 c sucanat
  • 5 T butter
  • 1 c flour
  • Filling:
  • 3 eggs
  • zest and juice of 3 lemons
  • 1 t vanilla
  • 1/2 t baking powder
  • 1/8 t salt
  • 3 T flour
  • Confectioners Sugar


  1. Preheat oven to 350°.
  2. Combine crust ingredients and press into a 8×8 pan. Bake for 15 minutes.
  3. While baking, beat the eggs and then add the rest of the filling ingredients. Pour over the baked crust and bake another 20 minutes until set.
  4. Sift powdered sugar on top once cooled.
