KALE TACOS

It is very rare we use some sort of vegetarian meat in a dish and we decided to try Quorn Grounds a product we’ve never tried.  The reason we stay away from these foods is because they are processed and ‘dead’ = no life within the food.  But I will give this product a high rating as this was definitely one of the better ones in taste and texture!

1. I sautéed the kale (local) in some olive oil and braised it down with some veggie stock to cut the bitterness.

2. I made some guacamole to go with it the tacos… avocado, tomato, lime juice, salt, and olive oil!

3. Next I sautéed some onion (local) in olive oil and added the ‘meat’.  To this I added a Latin seasoning packet designed for beef with green olives and raisons.  Sounds weird but then again I’m weird.  I also added some frozen corn, fresh cilantro, lime juice, and of course the cooked kale.

We ate these with the local corn tortillas and some grated raw jack cheese : )
