Frittata Burrito

On the days where I have a bit more morning time I tend to make a more substantial breakfast, or rather brunch.  I was in the mood for some veggies so I made a kale, carrot, and daikon radish frittata.  There was way more veggie than egg and it was quite delicious!!!

  • kale, stem removed and chopped thin
  • carrot, thinly sliced
  • daikon radish, thinly sliced
  • 2 eggs, scrambled (I was going to use 1 egg with milk, but we were out of milk)
  • butter
  • cheese (I used mozzarella)
  • tortilla
  • romaine lettuce, chopped
  • s&p

In a small skillet melt some butter and add the kale.  Cook until edges of leaves become a bit crispy.

Next place a layer of carrots on the kale, and then a layer of daikon radish.

Pour the egg mixture as evenly as possible on the veggies and season with s&p.

Lastly place some cheese on the egg and stick in the broiler.  Cook until cheese us melted and browned.

Chop frittata in half, layer both sides into a tortilla and top with chopped lettuce.  YUM

Ready to Eat!
