Fava Bean Soup

I realized I forgot to post this recipe last week.  I may have seasoned it with more than I’m noting here but this is the method…

I soaked 10 oz Fava Beans over night.  The following day I cooked them with a mixture of veggie broth and water.  I started with 6 cups but ended up adding more.  As the beans simmered and softened I mashed them in the pot creating more of a thick stew.  Once the beans were fully cooked I added a dozen or so baby mushrooms.  They were bite sized so I left them whole.  I seasoned the soup with s&p and let simmer for another 15 minutes or so.  Literally this is it!  It’s key to use a good veggie broth that adds a nice richness to the soup.  I have been using Pacific Natural Foods brand.

We served this over white rice with avocado and cubes of raw cheddar cheese. (no cheese = vegan)

I will make this again in the future and add some more veggies to it making it more exciting and probably omit the rice.
