This is an awesome idea. I have seen endive cooked this way before but finally decided to try it! I used goat cheese and parmesan, but feel free to use any other cheese instead. We enjoyed these with some Sister’s Pantry Dumplings and avocado.
- 2 endive, 1 per person
- parsley, chopped
- 1/2-3/4 c veggie stock
- olive oil
- garlic, chopped
- goat cheese
Slice endive lengthwise and brown each side in an oven proof pan with some olive oil. Once nicely browned add garlic and stock. You want the cut side to be facing up.
Add parsley, s&p, and top with cheese. Bake in a 400º for about 30 minutes, until cheese is nicely browned.
