Elk Stew

I made Josh another round of beef stew… this time using elk.  Original Recipe

Elk Stew

Elk Stew:

  • Stew meat
  • Baby Carrots
  • Diced Red Potatoes
  • Chopped Celery
  • Sliced Onion
  • Bag Frozen Peas
  • Chopped Garlic
  • S&P (~1 1/2 t each)
  • Paprika (~1 t)
  • Thyme (~1 t)
  • Bay Leaves (2)
  • Worcestershire  (~2 T)
  • Beef Broth, ~ 1 carton
  • Cornstarch
  1. Coat stew meat in cornstarch and set aside.  (This makes for tender meat!)
  2. Add Carrots, Garlic, Potatoes, and Onion to crock pot.
  3. Add the meat and beef broth.  The beef broth should just cover all the ingredients.
  4. Top with frozen peas and seasoning.
  5. Cook on high for 4-6 hours or on low for 10-12.
  6. 30 minutes before completion scoop out some of the broth and dissolve 1-2 T of cornstarch in it.  Add back to the crock pot and continue to cook until serving.
