Tuesdays tend to be my late work night and Joshua was nice enough to whip up a little din-din for us. I have been craving some baby bok choy but the store was out so we opted for a box of ready to cook greens (collards, swiss chard, and some other stuff).
I don’t know the exact recipe but it goes something like this
- Green Onion
- Water Chestnuts, rinsed and drained
- Soba Noodles
- Ume Plum Vinegar
- Teriyaki Sauce
- Box of Greens
- Chicken Broth or Veggie Broth or Water
Heat some oil in a wok, add the veggies, sauté, add the sauces, and toss in the cooked soba noodles. Remove from wok. Add greens to wok and toss with a bit of tamari and chicken broth. Since the greens are mildly bitter adding a bit of broth allows the flavor to cook off while softening the greens. Serve noodles in a bowl topped with the greens. Thanks Lovie!!!
