Crockpot Soup

Happy Thanksgiving!!!  I know, I know.. it’s been really quiet around here.  I had great intentions of sharing a few Thanksgiving recipes in the last week but.. well.. life.  Between obligations, having visitors in town for about a week, and then immediately becoming a sick household I felt like I was barely holding on!  We are still sick but thankfully the kids and I are over the worst of it.  I’m coming up for air and happy to report I am cooking a Thanksgiving meal today.  On Monday I wasn’t sure it would happen.  Stay tuned as I will share my recipes over the next week.

In the meantime here’s one of my weekly winter meals.  You all know by now how much I love using my crockpot for soups!  I don’t follow a recipe but instead buy whatever veggies look good at the store and choose a protein.  I add these to the crockpot with some seasonings, broth, and ta-da you have a foolproof method for creating a delicious meal!  I like to make a large batch to enjoy two nights in a row for dinner.  A total win for two dinners with minimal cooking!!

As you enjoy your Thanksgiving celebrations remember to take a moment to find gratitude for all you have.  This week I’ve been reflecting on how beautiful my life is.  * I live in gorgeous sunny Colorado just outside of Boulder.  Everyday as I drive into work or drop Cia off at school I have an incredible view of the Flatirons in front of me.  This view never fails to mesmerize me!  * Since day one I have been graciously welcomed into my job and have felt endless support from everyone involved.  I could not be happier!  * I feel so grateful for my family.  We are each so different and a handful in our own ways, but together we make a strong and beautiful team!!   * And lastly I truly appreciate my body and my mind for allowing myself to continually push and discover new potentials.  We are always growing and traveling down new paths, I am blessed to be open to change however this may come.  Happy Thanksgiving and Cheers to a Season of Gratitude!!

Crockpot Soup

Crockpot Soup

A hearty winter soup of veggies and ground beef cooked in the crockpot. Perfect for those cold chilly nights!

Ingredients

  • 1 lb ground beef
  • 1 large leek, sliced into thin halfmoons
  • 3 cloves garlic, minced/pressed
  • 2 carrots, chopped into thin rounds
  • 1 zucchini, chopped into 1/4" halfmoons
  • 1 yellow squash, chopped into 1/4" half-moons
  • 1 large fennel bulb, chopped
  • large handful haricot verts, chopped into 1-2" pieces
  • 10 oz crimini mushrooms, sliced
  • 1/2 cup parsley leaves, minced
  • 1/2 teaspoon Italian seasoning blend
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • bay leaf
  • s&p
  • 28 oz carton crushed san marzano tomatoes
  • 1 qt chicken broth
  • pecorino romano cheese rind *optional

Instructions

  1. In a large skillet brown the ground beef. Drain off fat and add to crockpot.
  2. Prepare veggies and add to crockpot along with seasonings, season generously with s&p. Stir in the tomatoes combining everything and pour in the broth. Add the cheese rind to the center of the crock if using.
  3. Cook on low 8 hours.
  4. Serve with plenty of fresh grated pecorino romano.

Notes

Don't throw out your pecorino romano or parmesan rinds. There is plenty of flavor left in them, perfect for adding them to your soups. The broth takes on the flavor adding a nice complexity to your meal. I store mine in a jar in the freezer. I have a nice collection waiting for me to use this winter!!
