I cannot tell you the last time I’ve cooked dinner for only moi… I used what we had left in the fridge and made a simple pasta dish. Less dishes to clean, smaller pots used, it was a nice change.
- Roasted Fennel Bulb rubbed with Olive Oil and Balsamic
- Grated Carrot
- Rice Pasta
- Olive Oil
- Garlic Seasoning
- Parmesan Cheese
I sautéed the onion then added the carrot and spinach just wilting. Tossed in the pasta and fennel and spices. Topped with parm!
