I have posted this salad in the past but since it’s such a delicious one I figured I’d go ahead and remind everyone. I grew up on this salad and it has become one of Josh’s favorites. Maybe because it takes about 5-10 minutes to throw together. Or maybe it’s because it’s one salad I will agree to eat whenever he mentions it. It’s perfect for the last minute dinner. And it’s filling when you add a can of beans, cheese, and avocado. Lots of protein!
Overall I am not a huge fan of salads. I do enjoy them when I’m eating them but it takes me a bit to actually motivate to make and enjoy one. Josh always says I think too much with my head and not my stomach. But don’t we all? Well all of us except him.
- romaine hearts
- pinto beans, drained and rinsed (whole can)
- shredded cheese
- chopped tomato
- chopped avocado
- crunched chips
- French dressing
- slivered black olives (something we always love but forgot to purchase at the store this round)
- Add all ingredients into a large salad bowl and toss well.
