Breakfast Burrito, my way

 

Colorful Breakfast Burrito

 

Josh loves breakfast burritos.  Potatoes beans and eggs stuffed into a burrito smothered with salsa.  Honestly I cannot find any sort of yum factor from within enticing me to eat such a meal.  So here’s a quick breakfast I whipped up with what was going on in the fridge.

  • Onion, chopped
  • Carrot, julienned
  • Daikon Radish, julienned
  • Celery, julienned
  • Butter
  • S&P
  • Egg (I used almond unsweetened)
  • Milk
  • Cheese
  • Hummus
  • Mixed Greens
  • Tortilla

Cooked Veggies

1. First sauté the onion in some butter and about 3-5 minutes before done add the carrot, radish, and celery.  Sauté a few more minutes, season with s&p, and set aside.

2. Fork scramble egg and milk in a bowl.  Transfer to a butter coated pan (I used the one from my veggies) and scramble egg adding s&p and cheese at the end to melt.

3. Heat tortilla slightly and assemble… thin layer of hummus on the tortilla, mound of greens, veggies added, topped with scrambled egg.

Tip: Use a small piece of foil to hold the base together for easy eating.
