I made a pie for Brian’s birthday and found my inspiration from the rhubard at the Farmer’s Market. I was also able to pick some locally off a huge bush (and for free!). Josh was my amazing pie crust maker using spelt flour. I made a strawberry rhubarb pie and used tapioca as a thickener. I put the pearls in the coffee grinder first to eliminate the chance of a ‘lumpy’ filling and also added blood orange zest. Amazing!!!
