What do you do when you have no plan for dinner, all the prepared foods at the store look pretty unappealing, and you don’t want to spend more than 10 minutes in the kitchen cooking? Refried beans and chips! I grew up on refried beans. Easy, healthy, and filling. And Josh loves any kind of Mexican food, like my parents, so he was pleasantly surprised when he realized this is what I planned to make. I heated a can of black refried beans and added some chili powder, salt, diced green chiles, and sliced black olives to season them up. You can’t eat them plain! I topped the beans with some grated cheddar cheese and chopped cherry tomatoes. And lastly on the side I placed some chopped romaine lettuce with green goddess dressing. Served with chips and salsa. Seriously 10 minutes in the kitchen!
