Naan & Eggs

Quick and easy breakfast, brunch, or snack idea. If you don't have naan use a slice of bread. And feel free to use spinach or kale instead of arugula.


  • naan bread
  • handful of arugula
  • butter
  • 2 eggs
  • cheese
  • tomato slices


  1. Sauté arugula in a pat of butter in a skillet.
  2. Meanwhile heat/toast naan.
  3. Place naan on a plate and top with wilted arugula.
  4. Add a bit more butter to the skillet and fry eggs. Season with s&p and top with cheese. Once cheese is melted place on top of arugula.
  5. Garnish with a few tomato slices.
